Once of my new favorite gluten free substitute foods are Mission brand Gluten Free Flour Tortillas! To me, they taste just like regular white flour tortillas. They are elastic and don't break or dry out easily! If you're trying to be healthy, these are extremely nutritious, but if you're celiac or gluten intolerant, they provide an excellent medium for wraps and burritos! I've used these in my salmon and kale wraps, in turkey lunch wraps, and also in some not so healthy desserts! One of my favorite ways to eat these tortillas is making fried cinnamon sugar pinwheels for dessert. Its so quick and easy and tastes just like a churro! Cinnamon Sugar Pinwheels 2 tortillas 2 tbsp. butter 2 tbsp. sugar 1 tsp. cinnamon Spread about 3/4 of a tbsp. of butter on each tortilla, sprinkle 1/2 of the sugar and 1/2 of the cinnamon on each and roll up. Once rolled, cut pieces about 1 inch wide. In a small frying pan, melt the remaining butter (should be enough to coat the pan). Once melted, place the tortilla pinwheels in the pan rolled side down. Cook on each side for about 2 minutes until it begins to caramelize and get a dark brown. Remove from heat and let cool slightly, then enjoy! Makes 2 servings, and goes great with vanilla ice cream or whipped cream :) Disclaimer: THIS ISN'T HEALTHY! But it is very yummy!! |
