Using a spiralizer tool, make "zoodles" using one whole zucchini. Coat with the olive oil and seasonings and set aside so all the flavors can soak into the noodles. Let sit for at least 30 minutes, the longer the better.
After the 30 minutes have passed, heat up the butter in a small fry pan over medium heat. Add the shrimp and cook until pink (approx. 4-5 minutes). Keep the shrimp in the pan on the burner and add the noodles and lemon juice. Stir everything around and heat until noodles are up to temp, about a minute or two.
Garnish with the halved cherry tomatoes and parmesan cheese, or whatever else sounds delish and enjoy.
Again, this made just one meal. Double, triple, quadruple the recipe if you would like to make more, just remember that cooking times may also increase!!
