Parsnip "French Fries"

  • 2 Parsnips, peeled and sliced into fry pieces
  • 2 tbsp nutritional yeast
  • 1 tsp dried thyme
  • 1-2 tbsp garlic infused oil
  • Salt

Preheat oven to 350 degrees. In a gallon ziplock (or bowl) coat parsnips with oil, yeast, and thyme. Place on a in a single layer on a parchment paper covered baking sheet. If you don't have parchment paper you can just spray a baking sheet with cooking spray. I like parchment paper for an easier clean up!

Bake for 20-24 minutes until fries are soft, then switch the oven over to broil (high) and cook an additional 1-2 minutes to get them crispier. My grandma always told me to broil with the oven door slightly ajar so thats how I always do it. This makes it easier to watch the oven contents closely since its only a matter of seconds before they'll burn.

Once they get a little brown and crispy, take them out, toss in some salt and enjoy!
