Butternut Squash Lasagna

  • 1 jar marinara sauce, one cup used with meat and rest for layering
  • 2 cups large curd cottage cheese
  • 1 large butternut squash
  • 1 1/2 cups Parmesan cheese
  • 1 lb sweet Italian sausage
  • 2-3 cloves garlic, chopped finely
  • 5-6 large leaves fresh basil, chopped roughly
  • 1 tsp. crushed red pepper flakes

Brown sausage with garlic, basil and pepper. Once cooked through, reduce heat to low and simmer with 1 cup sauce.

While meat is simmering, peel and cut squash into strips about 1/4 inch in thickness.

Grease a 12by9 baking dish with cooking spray and place one layer of squash down, then one cup cottage cheese, 1/2 of the meat, and 1/2 of sauce. Repeat with the remaining ingredients and top with Parmesan cheese.

Cook at 400 degrees for approx. 40 to 50 minutes (or until squash becomes soft and can easily be pierced with a fork).



Makes approx. 6 large servings.
