SIBO Thyme Salmon

9/29/2014

  • 1 small salmon filet (the one I made was 6-8 ounces)
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. garlic infused olive oil
  • 1 tbsp. butter

Preheat oven to 350 degree fahrenheit.

Coat flesh of salmon with oil and seasonings and set aside.

In an oven safe skillet, heat the butter over medium-high heat until its melted and add salmon flesh down. Sear salmon for 2-3 minutes, depending on thickness. Flip filet and move entire skillet into the oven for 9-11 more minutes until salmon begins to flake.

Creamy Avocado Dressing

9/29/2014

1 ripe avocado
2 limes, juiced
1 tsp. salt
1 tbsp. olive oil
1 tbsp. fresh cilantro

Combine all ingredients in a food processor or blender and enjoy! I used this as a dressing for a kale, black bean, corn, and red pepper salad and the amount of lime juice in it kept the avocado from getting brown for days!

Banana Chocolate Chip Muffins

Picture
  • 2 brown bananas
  • 1 1/2 cups flour (gluten free or regular)
  • 1/2 cup rolled oats
  • 1 cup white sugar
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp. vegetable oil
  • 1/2 cup unsweetened almond milk
Preheat oven to 350 degree fahrenheit.

In a gallon zip lock bag, add peeled bananas, seal again, and mash. The whole recipe will be made in the zip lock back, so there will be very little clean up, plus I think its a great recipe for children because they can get involved and mash the bananas and mix up all of the ingredients.

Once the bananas are mashed, add the remaining ingredients and shake everything up to combine it. Cut a small corner off of the sealed bag, and use it like a pastry bag to fill a greased muffin tin (or paper liners)  2/3 of the way full. Bake for 13-15 minutes.

Makes 12 muffins.

Enjoy :)
